Vegan, Grain-Free Italian Almond

Made with almonds and a hint of lemon, this cookie was inspired by the many trips my husband and I have taken to New York's Little Italy just for dessert. They're grain-free, naturally gluten-free, and just happen to be vegan too! Texture? Just the way we like them with crisp edges and chewy centers. They freeze well too, so you can save more for later if they last that long!
